Collagen production is the most important function of Vitamin C complex in the human body. Collagen makes up about 30-40% of the protein content of your body in the extracellular matrix and in the connective tissue.
There are at least 16 types of collagen, but 80-90% of the collagen in the body consists of the following four types.
- Type I collagen is found in the connective tissue of the skin, bone, teeth, tendons, and ligaments.
- Type II collagen is cartilage.
- Type III collagen gives shape to organs such as the heart, liver, kidneys, and brain.
- Type IV collagen consists of sheets between layers of cells (e.g., blood vessels, muscles, and eyes).
The various collagens and the structures they form all serve the same purpose – to help the tissues of your body withstand stretching.1
Collagen in the Interstitium
Collagen forms the bulk of the interstitium. Interstitium is the largest new organ of the body, recently discovered by Dr. Neil Thiese, MD, a professor of pathology at New York University’s Longone School of Medicine, using confocal laser endomicroscopy, a high-powered imaging tool.2-6
In Latin, interstitium means “the place in between” the cells. These in-between spaces found everywhere in the body contain ducts that are filled with water and immune cells that protect us from disease (see Figure 1).
This huge river of fluids connects all of our organs and systems together to help the body get rid of wastes like toxins and infections (see Figure 2).
Interstitium makes up about 20% of our body.
The interstitium is constantly rebuilding itself and needs a constant new supply of collagen. For example, the interstitium surrounding the intestinal tract replaces itself every three days.
The interstitium as an interconnected network of fluid could be the route cancer cells take to metastasize (spread) throughout the entire body (see Figure 3).7
In summary, the health of the interstitium determines the health of the body. The maximum functional efficiency of any organ of the body is dependent upon its structural integrity. Since collagen is the main structural substance of all the organs of the body, a deficiency of collagen will eventually result in the destruction and malfunction of the organs involved.
